Dutch Pancakes - Pannekoeken http://home.att.net/~kibble_web/reciparch.htm#Pancakes - 1 1/2 cups milk - 3 eggs - 1 cup flour - 2 tablespoons of margarine, melted - 1/2 teaspoon salt - margarine for the pan Blend together the milk, eggs and flour until well mixed. Add melted margarine and salt and stir. Heat a 10" (or larger) non-stick frying pan over medium heat. Add enough margarine to coat the pan. Pour in a measure of batter and tip the pan around until the batter coats the pan. Fry until bottom of the pancake reaches a golden brown color (approximately 1 minute) and flip. Fry on the other side and place on a warm plate until you are ready to serve. Sweet topping suggestions - powdered sugar - maple syrup - fresh fruit (berries are especially goodd) - apples and cinnamon (cook 2 thinly sliceed and peeled apples over medium heat with 2 tablespoons of butter, 2 tablespoons of sugar and 1 teaspoon of cinnamon until well heated) - chocolate sauce - yogurt - jam (and peanut butter, if you're feelinng adventurous :) Savory Topping Suggestions - bacon - thin slices of tomato, grated mozzarellaa and some fresh basil (put in the oven to melt the cheese) - beef, chicken or fish ragout - ground beef or sausage and gravy - cheese - fried onions Of course, these are just suggestions. Feel free to play around and experiment and find your own combinations. ------------------------------------------------------ **Don's note. We made these with cut up bananas and a touch of applesauce, and then cut up peaches and a touch of applesauce. The actual pannekoeken was pretty similar to many we ate in Amsterdam. They would make great "dinner" ones too with meat and cheese.
